
It is Fall, friends and the smell of baked apples is a great way to wake your family on a lazy Sunday morning. This a super simple apple oatmeal that I promise your whole family will enjoy!


Ingredients:
2 tablespoons of ground flax
2 apples, peeled, cut into small bites
4 tablespoons of water
2 cups of plant milk
2 cups of oats
1 tablespoon of cinnamon
1 teaspoon of vanilla extract
3/4 cup of maple syrup
pinch of salt
1 teaspoon of baking powder
1 cup of pecans chopped
1/2 cup of walnuts chopped
Topping: a drizzle of honey and pecans (may also use brown sugar)
Method:
- Preheat oven to 350 degrees.
- Mix flax and water and set aside.
- In a large bowl, add oats, apples, cinnamon, salt, baking powder, and nuts.
- Add milk, vanilla, and maple syrup.
- Stir to combine and pour into a 9×9 baking dish.
- Drizzle with honey (or sugar) and a handful of pecans.
- Bake for 45-60 minutes, depending on your oven. I pull it out when it is bubbly on the sides.
- Serve with maple syrup.
