Ingredients:
3 ripe bananas mashed
1 flax egg
1/2 cup maple syrup
3 tablespoons melted coconut oil
1 teaspoon vanilla
2 tablespoons of chia seeds (in a bit of water)
1 cup of almond flour
1 cup of old fashion oats
1 cup of gluten-free flour blend
1 teaspoon of cinnamon
1/2 teaspoon of salt
1 teaspoon of baking powder
1 cup of fresh blueberries
Method:
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine chia seeds and a few tablespoons of water.
- Add mashed bannanas, flax egg, maple syrup, coconut oil, vanilla, and stir to combine.
- Add almond flour, oats, gluten-free flour, salt, cinnamon, baking powder, and mix well.
- Gently stir in blueberries.
- Pour into greased muffin pans ( I grease with coconut oil) and bake for 30 mins or just lightly browned outside and tops are cracking a bit.
- Store in the fridge for a week.
*If you find the mixture is too dry, you can always add a bit of plant milk.
*You could replace blueberries with any fruit you love!
