Mock Chicken/Tuna Salad

This recipe comes straight from my own Momma and is absolutely yummo! This salad fills my craving for an old fashion tuna salad without the tuna!

Ingredients:

1 can of chickpeas (garbanzo beans) rinsed and drained

1/4 cup vegan mayo

1/2 cup bell pepper, diced

2 stalks of celery, diced

1/4 of red onion, diced

1 dill pickle, diced

1 tablespoon lemon juice

1 tablespoon dijon mustard

2 tablespoons of fresh dill or 1 tablespoon of dried

1 tablespoon of fresh or dried chives

salt and pepper to taste

Optional add on’s chopped pecans or sunflower seeds

Method:

  1. Mash chickpeas with a potato masher or fork until desired texture.
  2. Add the following ten ingredients and stir.
  3. Serve on crackers or with toast and lettuce as a sandwich.
