Breakfast: Simple Granola

Ingredients:

  • 3 cups rolled oats
  • 2 cups of nuts chopped into bite-size bits, I used pecans and walnuts, you could use any nuts you and your littles love to eat
  • 1 cup of shredded raw coconut
  • ½ cup of either honey, maple syrup, or brown sugar. You could use a mix of each
  • ¼ cup of coconut oil melted
  • ¾ teaspoon salt
  • 1 cup of raisins or any dried fruit
  • 1 tablespoon cinnamon (optional)

Method:

  1. Preheat oven to 275 degrees F.
  2. In a large bowl, combine the oats, nuts, and coconut.
  3. In a separate bowl, mix sugars, oil, salt, and cinnamon. Combine both mixtures and pour onto sheet pans. I prefer to use parchment on cookie sheets when baking. 
  4. Bake for 1 hour or until golden brown or even color. Stir occasionally.
  5. Remove from oven and stir in dried fruit.
  6. Store in an airtight container. Enjoy by itself, with milk, or over yogurt.
