Quick 15 Minute Dinner for Two

Ingredients:

  • 2 large sweet potatoes washed
  • 1 ripe avocado
  • Juice of 1 lemon or lime
  • 1 can of black beans rinsed
  • ½ tsp garlic powder or fresh garlic
  • Salt & pepper to taste
  • 1 tablespoon olive oil
  • A handful of cilantro chopped (optional)

Method:

  1. Poke holes in sweet potatoes with a fork. I microwave it for six minutes, but you could also cook a bit in the microwave and then bake. If you have the time or desire, cook in the oven at 400 until a fork can go through the center. I will most often precook it a bit and then roast it at high heat. It’s delicious with a little olive oil and sea salt on the skin.
  1. Mash avocado with a fork and add garlic, juice of lemon or lime, cilantro, and salt and pepper.
  1. Drain and rinse can of black beans.
  1. Time to assemble! Slice open the sweet potato, add beans, and top with guacamole.
