Summer Stir fried veggies

What do you do with all the bok choy that you end up getting from your local farm share?

It’s simple, you make a summer stirfry! It’s a quick and easy dinner for your entire family that tastes great, is super filling and that everyone loves.

How do you get your teenagers to eat this? You add water chestnuts from a can! For some reason kids love them, I think it’s the crunch that it adds.

Tip #1 My mama always said cook the veggies in batches. Seriously, this is a great tip. If you cook them in batches then you won’t cook everything to the point of being mush, it will keep its color and taste really great.

So how do you get started?

Ingredients:

Tip #2 Any veggies you like! OK seriously I’m gonna tell you what I cooked in these, but you can substitute any veggies that are in season, that you love and that you know your family will eat.

  • 1 head Broccolini
  • 4 Carrots
  • 1 small white onion
  • 2 Peppers any color
  • 1 giant handful of Snow peas
  • 4 stalks Celery
  • 4 Garlic cloves
  • 1 can sliced water chestnuts
  • 1 cup veggie broth
  • Liquid aminos or soy sauce
  • All the veggies should be cut into bite-size

Method:

1. Start with a bit of water, oil or liquid aminos in a large skillet on medium high heat. This is your preference on how you like to sauté veg. Some folks don’t like to use any oil in there cooking and therefore you could just add a dash of hot water or liquid amino‘s. I typically start with a little bit of oil and then from that point on only add water or liquid amino‘s.

2. Add onions and sauté to just a bit translucent.

3. Remove onions and add another one or two veg that cook at about the same rate. Each time only cooking them to the point of just about done and still crisp.

4. Remove those veggies and continue with this method until they are all finished. Make sure you end with the garlic, because that has a tendency to burn if cooked too high.

5. Add one cup of vegetable broth to the pan and as much amino‘s or soy sauce that you enjoy. You could also consider thickening the sauce with adding a little cornstarch and water. I typically keep this as basic as possible and I don’t do that.

6. Return all the veggies back to the pan and give it a good mix. All you want to do at this point is warm up everything. Do not over cook!

7. Serve immediately over rice and don’t Forget to throw out some condiments onto the table. Try using sweet chili sauce, peanut sauce or a little more soy sauce.
