Chocolate Chip Banana Pancakes:

Gluten-free, Vegan, Dairy-Free, and Teenager approved!

Let’s be honest, competing with sugary colorful breakfast foods when you have three teenagers is not easy. The average teen is eating processed fatty refined sugar each morning meal.

I often feel like throwing up my hands, but this morning I made some pancakes that they loved and still made them feel like they were eating dessert for breakfast!

If you don’t want to add chocolate chips, feel free to substitute with blueberries or anything you love.

Ingredients:

2 Cups of Oats ground
½ Cup of Almonds ground
Pinch of salt
2 Tbsp of Chia Seeds
2 ripe Bananas
1 ½ Cups of Plant Milk
1 tsp of Vanilla
2 Tbsp Maple Syrup
1 cup of Dairy-free mini chocolate chips or one bar of pure chocolate chopped

Method:

Grind oats and almonds in a food processor and pour into a mixing bowl. Then add the salt and chia seeds and stir. Blend bananas and milk in processor and add to mixing bowl. Stir in vanilla, maple, and chocolate. Add vegan butter or coconut oil to the skillet 350 degrees, and when hot, add pancakes. Flip when pancakes are brown on the bottom and easy to pick up.

Serve with nuts, bananas, and maple syrup.
