Vegan Caesar Salad Dressing

Who doesn’t love a good Caesar salad? This particular dressing was created on a fun lunch date with my friend Bernie. The great thing about dressings, in general, is that you can add more flavors or subtract others. Play with it and use this recipe as a jumping-off point

Ingredients:

Juice of one lemon

3 cloves of garlic

1/2 cup vegan mayo

1/2 cup olive oil

1 teaspoon capers

1/2 teaspoon dijon

2 teaspoons vegan Worchestershire sauce

Pepper to taste

1 or tablespoons of water (only needed to thin the sauce if it is too thick)

Method:

  1. In a small food processor or mixer, add all the ingredients except the water.
  2. Blend until smooth, and then check the consistency and taste.
  3. Add water if the dressing is too thick, but go slow and only add a little at a time.
  4. Pepper to taste and salt if necessary. 
  5. Keep in a mason jar in the fridge for up to 5 days.

*I love to serve this with roasted chickpeas and walnuts. Toasted pinenuts are also a great addition.
