Oatmeal Chocolate Chip Cookies: Gluten-free and Vegan

Well, friends, I am currently bored out of my mind, stuck in quarantine, and was craving cookies! These oatmeal chocolate chip cookies are what I came up with, and I don’t think they disappoint!

Enjoy!

Ingredients:

1 mashed banana

1/2 cup softened vegan butter or coconut oil

1 teaspoon vanilla

2 tablespoons of brown sugar

4 tablespoons of maple syrup

2 cups of old fashion oats

3/4 cup of almond flour

3/4 cup of gluten-free flour

pinch of salt

1 teaspoon of baking soda

1 tablespoon of cinnamon

1 cup of vegan chocolate chips

Method:

  1. Preheat oven to 350 degrees.
  2. Add mash banana to a mixing bowl. 
  3. Add butter, sugar, vanilla, and maple syrup, and cream together.
  4. Add both flours, oats, baking soda, salt, cinnamon, and salt and mix.
  5. Gently fold in chocolate chips.
  6. Onto two baking sheets lined with parchment, add large spoonfuls of cookie mix. 
  7. Bake for 10-13 minutes or until a bit brown on the bottom.
