Basil Cashew Cream Sauce

Ingredients:

Juice of 2 lemons

A handful of kale (about a cup)

2 giant handfuls of basil (about two packed cups)

4 large garlic cloves

1/4 cup of raw cashews

1/4-1/2 cup of good olive oil

Salt and pepper to taste

A bit of pasta water

Method:

  1. Soak cashews in hot water for at least twenty minutes.
  2. Drain cashews and add to a high-speed blender.
  3. Add basil, kale, garlic, lemon juice, and olive oil to the blender.
  4. Mix on high and then add salt and pepper. You want this to be thoroughly mixed, so continue to scrape the sides if needed and continue to blend until thoroughly mixed.
  5. Cook pasta according to directions, and when draining, save a cup of the pasta water and put it aside. 
  6. Mix the pasta in a large bowl with the basil cashew mixture and add as much pasta water as needed. Be careful not to water it down. Use a tablespoon at a time until you have the desired consistency. 
  7. I served this with roasted veg on top… Straight from the farm!
