Simple Almond Lemon Cupcakes

Ingredients:

3 cups of blanched almond flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup melted coconut oil

1/2 cup maple syrup

3 eggs

2 teaspoons vanilla

1 teaspoon lemon zest

2 tablespoons almond milk

Method:

  1. Preheat the oven to 375 degrees.
  2. Mix the wet ingredients in a bowl.
  3. Mix the dry ingredients in a large bowl.
  4. Add the wet to the dry bowl.
  5. Grease a cupcake/muffin pan.
  6. Pour in batter and cook for 20-15 minutes or until the knife comes out clean.
  7. Serve with simple frosting or powdered sugar.
