Ingredients:
1 cup of peanut butter (crunchy)
2 tablespoons of coconut oil
1/2 cup of raw honey or maple syrup
1 tablespoon of cinnamon
1 tablespoon flaxseed ground
1/2 teaspoon sea salt
2 cups of old fashioned oats
1 cup of nuts chopped, I use walnuts
1/2 cup of chocolate chips, I use minis
Method:
- Melt peanut butter and coconut in a small mug or in a pot on the stove.
- In a large bowl, mix all ingredients and pour in melted oil and peanut butter.
- Spread mixture onto an 8×8 or 9×9 pan with parchment in it so things will come out quickly. I often get my hands wet a bit as things tend not to stick when I press the mixture down to create a flat, even surface.
- Freeze for about 30 minutes and then take out lifting from the parchment paper to release all bars.
- Cut into a bar shape and keep in an airtight container in the fridge for up to two weeks.
