Vegan Meatballs

Spaghetti and meatballs are a family classic, and what is better than a quick recipe for your gang to enjoy. These meatballs are made with Beyond Ground Meat and have your typical ingredients. I hope you love them as much as we do. 

Ingredients:

1 pound beyond ground meat

1/2 cup old fashioned oats

1/2 of an onion diced

2-3 garlic cloves minced

1 tablespoon flax meal

1/4 cup of ketchup

2 carrots diced

2 tablespoons flat-leaf parsley chopped

2 tablespoons cilantro chopped

1 teaspoon fresh thyme 

salt and pepper to taste

Method:

Preheat the oven to 375 degrees. Line a baking tray with parchment. Gently roll into a ball in your hands about two inches. You should be able to make about 15 of them. Bake for 40 minutes. 

*When done, I either serve them as is with a marinara as a dipping sauce, or throw them right into some pasta sauce and serve over pasta or spaghetti squash noodles.
