Protein-Packed Waffles

All of my children have become athletes. My middle son always needs a few more calories and protein to sustain himself through the long golf tournaments. Here is a new family favorite waffle recipe that you can serve with berries and nuts or chocolate chips! These waffles have about 29.7g of protein in total and 5g per waffle. If you wanted to up the protein, add additional chia seeds that pack a lot of bang!

Ingredients:

1 1/2 cup of oat flour (take old fashion oats and grind to flour in a food processor or a Vitamix)

1/2 cup of blanched almond flour 

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon cinnamon (optional)

1 tablespoon ground flaxseed (optional)

1 tablespoon chia seeds (optional)

1/2 cup of plant milk (a little more if needed)

2 large eggs

2 tablespoons maple syrup

1 teaspoon vanilla

Food Processor Method:

  1. Pre Heat your waffle iron.
  2. The easiest way is add the oats to a food processor and grind to a flour.
  3. Then add all dry and wet ingredients and mix only until blended.
  4. The mixture will be thick. I did, however, add a bit more milk as the mixture sits. Just be careful not to make it too thin, as it will begin to stick to the waffle iron. 
  5. Spray waffle iron before adding a large scoop and close.
  6. Waffles are finished when steam stops and they come out easily.

Method:

  1. Pre heat your waffle iron. In a large bowl, mix all dry ingredients.
  2. In a small bowl, mix all wet ingredients.
  3. Pour the wet into the dry mixture and stir gently.
  4. The mixture will be thick. I did, however, add a bit more milk as the mixture sits. Just be careful not to make it too thin, as it will begin to stick to the waffle iron. 
  5. Spray the waffle iron before adding a large scoop to iron. 
  6. Waffles are finished when they come out easily, and steam has stopped. 
  7. Top with anything you like
