Gluten-Free Chocolate Chip Banana Bread

One of my children’s favorite snacks is banana bread.

I know everyone makes Banana bread! So why should you keep reading?

Because this here is a very healthy gluten-free version made with maple syrup that you are going to love!

These do contain eggs, and yes, we eat plant-based, but there are a few recipes we occasionally add eggs to, and this is one of them. If you have a vegan version of this, please share it in the comments below. I haven’t had much success with flax or chia eggs in this particular recipe.

So let’s get baking!

Ingredients:

1/3 cup coconut oil melted
1/3 cup maple syrup
1/3 cup plant milk, any kind
2 eggs
2 large bananas mashed, about a cup
1 teaspoon vanilla extract
1/2 teaspoon salt
1 1/3 cup gluten-free flour blend ( I use Bob’s Red Mill 1 to 1)
1/3 cup almond flour
1/3 cup oats
*You could also do 2 cups GF Flour and skip oats and almonds
1 teaspoon baking soda
1 tablespoon cinnamon (use less if you like)
1 large handful of mini chocolate chips (I use dairy-free ones)
1 large handful chopped walnuts or any nuts you like

Method:

1.Preheat oven 350′ degrees Fahrenheit and grease your loaf pan.


2.In a large bowl, mix oil, maple, milk, and bananas. I use a fork to mash bananas.


3.Add eggs and mix well.


4.Add vanilla, salt, flours, oats, baking soda, cinnamon, chips, and nuts.


5.Stir gently


6.Pour batter into greased pan and dust extra cinnamon on top. You could also decorate the top with a long slice of banana.


7.Bake 60 minutes or until a toothpick or knife inserted in the center comes out clean.


Let cool in the pan for 5-10 minutes, then turn onto a cooling rack and enjoy!
