Well, friends, I am currently bored out of my mind, stuck in quarantine, and was craving cookies! These oatmeal chocolate chip cookies are what I came up with, and I don’t think they disappoint!

Ingredients:
1 mashed banana
1/2 cup softened vegan butter or coconut oil
1 teaspoon vanilla
2 tablespoons of brown sugar
4 tablespoons of maple syrup
2 cups of old fashion oats
3/4 cup of almond flour
3/4 cup of gluten-free flour
pinch of salt
1 teaspoon of baking soda
1 tablespoon of cinnamon
1 cup of vegan chocolate chips
Method:
- Preheat oven to 350 degrees.
- Add mash banana to a mixing bowl.
- Add butter, sugar, vanilla, and maple syrup, and cream together.
- Add both flours, oats, baking soda, salt, cinnamon, and salt and mix.
- Gently fold in chocolate chips.
- Onto two baking sheets lined with parchment, add large spoonfuls of cookie mix.
- Bake for 10-13 minutes or until a bit brown on the bottom.
