


Ingredients:
1 1/2 cups old fashioned oats
1 1/2 cup of blanched almond flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/3 cup of melted coconut oil
1/2 cup of peanut butter
1/2 cup maple syrup or honey
1 egg
1 teaspoon vanilla
Method:
- Preheat oven to 350 degrees.
- Mix the wet ingredients in the mixer.
- Add dry ingredients to the wet and stir gently until combined.
- Line a cookie sheet with parchment.
- Make small balls with your hands about an inch or so and place a cookie on the tray (they are a bit wet feeling). Mine made about 19.
- Bake for 10-14 minutes until lightly browned.
