This method is such a simple and delicious way to eat sweet potatoes. It can be served as a side or as the main dish with a side of guacamole for dipping.
The best part is you throw it in the oven and walk away.
Ingredients:
2-3 large sweet potatoes cut into large fries
2 tablespoons olive oil
salt and pepper to taste
1 teaspoon (or more) of cinnamon
- Now you don’t have to use the cinnamon; you could use garlic powder and or paprika instead. Any spices you like!
Method:
- Preheat oven to 425 degrees.
- Line a large baking tray with parchment paper.
- Arrange the sweet potato slices so that they aren’t too crowded.
- Season with oil and spices and give a good mix with your hands.
- Bake for 50 minutes or until thoroughly cooked through and soft. You could flip them halfway through if you want them browned on both sides. I am simply too lazy to do this!
