Simple Roasted Sweet Potatoes

This method is such a simple and delicious way to eat sweet potatoes. It can be served as a side or as the main dish with a side of guacamole for dipping. 

The best part is you throw it in the oven and walk away. 

Ingredients:

2-3 large sweet potatoes cut into large fries

2 tablespoons olive oil

salt and pepper to taste

1 teaspoon (or more) of cinnamon

  • Now you don’t have to use the cinnamon; you could use garlic powder and or paprika instead. Any spices you like!

Method:

  1. Preheat oven to 425 degrees.
  2. Line a large baking tray with parchment paper.
  3. Arrange the sweet potato slices so that they aren’t too crowded.
  4. Season with oil and spices and give a good mix with your hands.
  5. Bake for 50 minutes or until thoroughly cooked through and soft. You could flip them halfway through if you want them browned on both sides. I am simply too lazy to do this!
