Ingredients:
- 2 large sweet potatoes washed
- 1 ripe avocado
- Juice of 1 lemon or lime
- 1 can of black beans rinsed
- ½ tsp garlic powder or fresh garlic
- Salt & pepper to taste
- 1 tablespoon olive oil
- A handful of cilantro chopped (optional)
Method:
- Poke holes in sweet potatoes with a fork. I microwave it for six minutes, but you could also cook a bit in the microwave and then bake. If you have the time or desire, cook in the oven at 400 until a fork can go through the center. I will most often precook it a bit and then roast it at high heat. It’s delicious with a little olive oil and sea salt on the skin.
- Mash avocado with a fork and add garlic, juice of lemon or lime, cilantro, and salt and pepper.
- Drain and rinse can of black beans.
- Time to assemble! Slice open the sweet potato, add beans, and top with guacamole.
