Weekly Recipe
Breakfast: Simple Granola
Ingredients:
- 3 cups rolled oats
- 2 cups of nuts chopped into bite-size bits, I used pecans and walnuts, you could use any nuts you and your littles love to eat
- 1 cup of shredded raw coconut
- ½ cup of either honey, maple syrup, or brown sugar. You could use a mix of each
- ¼ cup of coconut oil melted
- ¾ teaspoon salt
- 1 cup of raisins or any dried fruit
- 1 tablespoon cinnamon (optional)
Method:
- Preheat oven to 275 degrees F.
- In a large bowl, combine the oats, nuts, and coconut.
- In a separate bowl, mix sugars, oil, salt, and cinnamon. Combine both mixtures and pour onto sheet pans. I prefer to use parchment on cookie sheets when baking.
- Bake for 1 hour or until golden brown or even color. Stir occasionally.
- Remove from oven and stir in dried fruit.
- Store in an airtight container. Enjoy by itself, with milk, or over yogurt.
