Ingredients:
3 cups of blanched almond flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup melted coconut oil
1/2 cup maple syrup
3 eggs
2 teaspoons vanilla
1 teaspoon lemon zest
2 tablespoons almond milk
Method:
- Preheat the oven to 375 degrees.
- Mix the wet ingredients in a bowl.
- Mix the dry ingredients in a large bowl.
- Add the wet to the dry bowl.
- Grease a cupcake/muffin pan.
- Pour in batter and cook for 20-15 minutes or until the knife comes out clean.
- Serve with simple frosting or powdered sugar.
